Kita Roberts is the recipe developer, photographer, and content creator behind the meat-filled, down-home, and savory recipes at GirlCarnivore.com. For over a decade she has produced eye-catching and all-original food, beverage, and travel content; sharing her passion for cooking over a fire, fine-craft cocktails, and the stories behind our food. She reaches more than a million followers each month with GirlCarnivore, which she launched in 2013. A long-time fan of Head Country sauces, seasonings, and marinade, Kita partnered with Head Country for the first time in 2018. Since then, she has created grilling and BBQ recipes ranging from snacks and sides to major-league main dishes—all meat-centric, of course, and all showcasing how Head Country brings people together.

An authority on all things meat, Kita aims to show that cooking isn’t a high-brow science and can be tackled by anyone who’s willing to get a little dirty. She inspires home cooks to make, and share, restaurant-quality experiences anywhere while helping them understand and appreciate our foodways.

These did not disappoint, actually, they got better with every bite and the “cheap” cut was the perfect choice for recreating the salty, spicy, citrus flavors I was craving.”

The chuck is a go-to for me, with a deep flavor and it has a decent amount of fat marbled into the beef that will render as it cooks, and becomes easily shreddable and tender when cooked in the Instant Pot. If you can’t find a chuck, you can substitute it with a sirloin roast, top blade, or rump roast for this recipe.
