Leftover meatloaf is one of our favorite foods, and we love it warmed gently in the oven and then topped with fried-onion strings, melted cheese, and BBQ sauce in these sliders. 16-20 slider buns
Your choice of cheese (we prefer Swiss or mozzarella)
Your favorite Head Country Bar-B-Q sauce
Pickles, for serving
Prepare meatloaf as instructed in the recipe linked above. This may be done in advance of making sliders by a day or two. If making meatloaf specifically for sliders, you can shape your loaves to better fit the size of your slider buns for a more clean-cut presentation.
Prep the onion strings as instructed. This is best done just before prepping your sliders.
Preheat the oven to 350 degrees F.
Prep the "patties:" Prepare a baking sheet lined with parchment paper.
Slice meatloaf into desired number and size of patties and place on baking sheet.
Top patties with your choice of cheese.
Place patties in oven until heated through and cheese is melted, approximately 3-5 minutes. If you're using meatloaf that just came out of the refrigerator, this step will take longer. Adjust time accordingly.
Assemble the sliders: For each slider, place patty on the bottom half of a slider bun, top with onion strings, drizzle with Head Country Bar-B-Q Sauce, and add the top bun. Serve with pickles and extra Head Country. Enjoy!
