BBQ Apple Bacon-Wrapped Chicken

Choose Granny Smith or one of your other favorite baking apples for this recipe. It's the best way to coax the most flavor from the fruit during the long cook time in the slow cooker, and the juices make bacon even better than, well, bacon.


BBQ Basics

Ingredients

8 bone-in chicken thighs, skins removed
16 slices of bacon
4 apples
1 c. Head Country BBQ Sauce, The Original or Hot & Spicy
2 tsp. garlic powder
3 Tbsp. white vinegar

Cooking Instructions

Wrap each piece of chicken with two slices of bacon. Place the bacon-wrapped chicken in the bottom of a slow cooker with a capacity of at least 6 quarts.

Grate the apples to the core and place in a large bowl. Add the BBQ sauce, garlic powder, and vinegar; stir to combine. Pour the BBQ mixture over the chicken.

Cook chicken on low for 6-8 hours (or on high for 3-4 hours). Transfer the chicken to a baking dish and broil on low for 5-7 minutes. Spoon the pan juices over the chicken a time or two. The chicken is done when the bacon begins to crisp and the sauce begins to caramelize. Serve with the pan sauce. Enjoy!
