No list of comfort food is complete without meatloaf. This recipe for the BBQ lover’s version of the classic adds our Marinade and your favorite flavor of our BBQ sauce for rich and robust flavor. Pairs perfectly with a heaping scoop of mashed potatoes and roasted green beans.
3 lbs. ground beef
¼ C. finely diced green bell pepper
¼ C. Head Country All-Purpose Marinade
¼ C. (mounded) minced dried onion OR 1/3 C. finely minced yellow onion
½ C. light brown sugar
2 eggs
2/3 C. milk
1½ Tbsp. minced garlic
1 Tbsp. olive oil
1½ C. bread crumbs, plus extra if needed
1 C. Head Country Bar-B-Q Sauce (try our Hickory Smoke flavor), plus extra for coating and serving
Preheat oven to 350 degrees F.
Line a rimmed baking sheet with aluminum foil. For free-formed loaves, lightly coat foil with non-stick spray or oil. For formed loaves in loaf pans, coat pans with non-stick spray or oil and place on baking sheet.
Mix all ingredients in a large bowl, taking care to fully incorporate wet and dry ingredients into the ground beef. If mixture seems too wet (as though it wouldn't hold its shape), add more bread crumbs. If mixture seems too dry (crumbling easily and not holding its shape), add water or milk in tablespoon increments until just right. Do not overmix.
Divide the mixture and shape into two loaves, or divide in loaf pans on a baking sheet.
Coat tops of loaves with Head Country Bar-B-Q Sauce.
Place loaves on middle rack of oven and bake uncovered until internal temperature at center of loaves reads 160 degrees F, about an hour. Allow to rest 15-20 minutes before slicing. Enjoy!
