These Instant Pot mashed potatoes are our go-to recipe for when we need to get everybody’s favorite side dish on the table, stat (and when is that ever not the case?). After just a few minutes in the pressure cooker, we mash the potatoes over low heat before adding everything you need to make creamy, out-of-this-world good mashed potatoes for a crowd. Leave the skin on or off, it’s up to you, and top with extra butter or our classic brown gravy.
4 pounds Yukon gold potatoes, cubed (and peeled, if desired)
Water (enough to complete cover potatoes in the Instant Pot insert)
1 tsp. salt
½ C. butter (plus more for serving, if desired)
6 oz. cream cheese, softened
½ C. heavy cream or ½ and ½
1 Tbsp. Head Country Original Championship Seasoning
1 tsp. pepper
Add potatoes, water, and salt to Instant Pot insert. Place the lid on the Instant Pot to seal. Cook on Manual mode for 10 minutes. Quick release the pressure. Drain the potatoes and return them to the Instant Pot insert.
Turn on the Saute mode on the Instant Pot. Using forks or a potato masher, quickly mash the potatoes, allowing steam to escape. Turn off the Instant Pot.
Add the butter, cream cheese, heavy cream or ½ and ½, Head Country Original Championship Seasoning, and pepper. Stir to combine. Spoon onto plates and serve hot; top with reserved butter, brown gravy, chives, or your favorite cast of characters. Enjoy!
