Life without burritos? No, thank you. Thanks to these burritos-in-a-bowl, complete with smoked pulled pork and zesty riced cauliflower, it's easy to skip the tortilla and load up on the low-carb (and delicious) fillings.
For the bowls:
2 lbs. from this Low Carb Pulled Pork recipe
1 Tbsp. olive oil
1 red bell pepper, deseeded and sliced into strips
1 green bell pepper, deseeded and sliced into strips
2 avocados, pitted, skinned, and cubed
1 lime, sliced into wedges
Head Country Sugar Free Bar-B-Q Sauce
Head Country Championship Seasoning, Original
Cilantro, minced, for garnish
For the Cilantro-Lime Cauliflower Rice:
1 10oz bag of cauliflower rice
1 Tbsp. olive oil
1 tsp. kosher salt
1 tsp. Head Country Championship Seasoning, Original
1 lime, zested and juiced
2 Tbsp. minced cilantro
Heat a drizzle of olive oil over medium-high heat in a large skillet. Add peppers and toss to coat. Season with Head Country Championship Seasoning. Stir peppers occasionally until softened, 5-7 minutes.
While peppers cook, prepare the cilantro-lime cauliflower rice. Cook the bagged cauliflower rice according to package instructions. Empty into a large bowl. Add olive oil, salt, lime zest, lime juice, and cilantro. Stir to combine.
Build burrito bowls: Divide the cilantro-lime cauliflower rice between four bowls. Add peppers and plenty of low-carb pulled pork. Top with avocado, lime juice, cilantro, a drizzle of Head Country Sugar Free BBQ Sauce, and, if desired, an extra sprinkle of Head Country Championship Seasoning. Enjoy!
