Low Carb Bacon Wrapped BBQ Meatballs

BBQ meatballs are a long-time kid favorite, and these low-carb, bacon-wrapped bites come together quickly and easily with a few little helpers. Simmer these meaty morsels while you're at work, or pop them in the oven for the perfect game-day centerpiece.

Ingredients

1 pound ground beef, 80/20
1 pound pork sausage
1 pound bacon
2 eggs, whisked
1/2 c. almond meal
1/4 c. unsweetened, unflavored almond milk
1 Tbsp. Head Country Championship Seasoning, Original
1 tsp. garlic powder
1/2 yellow onion, chopped
1/2 c. Head Country All-Purpose Marinade
Head Country Sugar Free Bar-B-Q Sauce
Chopped fresh Italian (flat-leaf) parsley, for garnish

Cooking Instructions

In a large mixing bowl, combine ground beef, sausage, eggs, almond meal, almond milk, Head Country Championship Seasoning, garlic powder, onion, and Marinade. Be careful to not overwork the mixture.

Use the mixture to create golf ball-sized meatballs. Wrap each meatball with half of a strip of bacon.

From here, you have a few options:

Slow cooker BBQ meatballs: Add a thin layer of Head Country Sugar Free Bar-B-Q Sauce to the bottom of a slow cooker. Add meatballs. Add the remaining Sugar Free sauce. Cook on high for 4-5 hours, or on low for 6-8 hours. Top with a bit of chopped parsley and serve with your favorite sides for supper, or add a toothpick to each meatball for the perfect homegating centerpiece.

Instant Pot version: Add a thin layer of Head Country Sugar Free Bar-B-Q Sauce to the bottom of your Instant Pot. Add meatballs. Add remaining Sugar Free sauce. Seal Instant Pot and, using the manual method, cook on high pressure for 25 minutes. Allow the pressure to self-release for 15 minutes, then release the rest of the pressure manually. Top with a bit of chopped parsley and serve with your favorite sides for supper, or add a toothpick to each meatball for the perfect homegating centerpiece.

Oven version: Preheat oven to 350 degrees F. Add a thin layer of Head Country Sugar Free Bar-B-Q sauce to the bottom of a large baking pan or rimmed baking sheet. Add meatballs in a single layer (you may have to work in batches). Brush each meatball with Sugar Free sauce. Add meatballs to the oven and cook for 45-50 minutes. Top with a bit of chopped parsley and serve with your favorite sides for supper, or add a toothpick to each meatball for the perfect homegating centerpiece.

Grill version: Preheat grill to 350 degrees and set up for indirect heating. Add meatballs in a single layer on the indirect heat side of the grill. Brush each meatball with Sugar Free sauce. Cook meatballs for 45-50 minutes, turning and basting with sauce a few times during cooking. Top with a bit of chopped parsley and serve with your favorite sides for supper, or add a toothpick to each meatball for the perfect homegating centerpiece. Enjoy!
