1 lb. ground beef
1 lb. pork sausage
2 eggs, whisked
1/2 C. bread crumbs
1/4 C. milk
1 Tbsp. Head Country Original Seasoning
1 tsp. garlic powder
1/2 large yellow onion, chopped
1/2 c. Head Country All-Purpose Marinade
8 strips bacon, uncooked
Head Country Bar-B-Q Sauce, your favorite flavor
Preheat oven or smoker to 325 degrees F.
Combine all ingredients, being careful to not overwork. Shape into a loaf.
Create the bacon weave for wrapping the meatloaf. Lay half the bacon across the meatloaf at a diagonal. Lay a slice of bacon across the bottom corner of the meatloaf, at a 90-degree angle to the first layer of bacon, weaving the strip over and under the strips of bacon below. Repeat with the remaining strips of bacon, tucking the edges into the loaf pan.
Cook the meatloaf until the internal temperature is 165 degrees. Glaze with BBQ sauce, cook for 5 minutes more.
Rest meatloaf for 10-15 minutes. Slice and serve. Enjoy!
